Scale Recipe

This function allows you to scale recipes, for example when calculating a smaller number of portions.

When a recipe is used as a sub-recipe in another recipe, usually only one portion of the sub-recipe is needed. If the recipe was originally created for 50 portions, this function allows you to scale it down accordingly.

  1. On the Dashboard page, click Recipe, and then Recipe List.
  2. Search for a recipe, and then click the Edit button to open the recipe in Edit mode.
  3. Click the Scale Recipe button. The Scale Recipe dialog displays the Current Number of Portions.
  4. Enter the New Number of Portions.
  5. Select the Scaling Method:

    Scaling Method Description

    Ingredients Quantity
    • The number of portions is updated to the entered quantity.
    • All ingredient quantities are recalculated.
    • The Cost of Sales is recalculated.
    • Yield quantities and units are adjusted accordingly.

    Number of Portions Only
    • The number of portions is adjusted.
    • All ingredient quantities remain unchanged.
    • Yield quantities and units are adjusted accordingly.
    • The Cost of Sales remains unchanged.
    • Nutritional values remain unchanged.

    Portion Size Only
    • The number of portions is adjusted.
    • All ingredient quantities remain unchanged.
    • Yield quantities and units are adjusted accordingly.
    • The Cost of Sales remains unchanged.
    • Nutritional values, allergens, and additives are recalculated when the recipe is saved.
  6. Click the OK button to commit the changes or click Cancel to return to the Recipe Details without saving the recipe scaling.
